Roasted Tomatillo Salsa {Recipe}

I finally had the opportunity to use the tomatillos that came in the previous Farm Fresh Ventures produce box because jalapeños came in the next.  What better way to use them both quickly than to make a salsa.

Here's what I did:

Cut tomatillos in half, half of a white onion, a couple of cloves of garlic (unpeeled), and a jalapeño.  Place ingredients on parchment-lined cookie sheet.  Roast until browned.  You can use the broiler or roast at 450 degrees F.
Place all ingredients in a blender.  Add cumin and salt to taste.  Blend.  Then add a handful of cilantro.  Blend again.  At the end add a little lime juice.

I served mine on Way Better Snacks Simply Sweet Potato Tortilla Chips.
