Spiced Blueberry Oatmeal {Recipe}

Did you know I went crazy with the blueberries last week? Another super-fabulous-can't-let-this-go-because-blueberries-will-be-crazy-high-out-of-season sale.  So I decided to flash freeze the pints, so that the blueberries won't clump together in the freezer bags.  That will come in later when I want blueberry treats but don't want to thaw out an entire bag just to get some.  If you're unfamiliar with flash freezing then check out this post on freezing berries.

I decided to use up some of the fresh blueberries to make some oatmeal for breakfast.  Enjoy these recipes and photos now, because when the school season resumes, I'll be at work and can't share all this yumminess on a regular basis.  Ok, on to the recipe.

{Spiced Blueberry Oatmeal}
makes 1 serving

1/2 c oats (I used old-fashioned oats)
1 c unsweetened almond milk
1/2 tsp of Kosher salt
water (if needed)
pumpkin spice blend (to taste) (click here to see how you can make it if you can't find it already mixed)
brown sugar

  1. In a sauce pot, combine oats, almond milk, salt, and pumpkin spice.  Heat over medium heat, stirring to combine ingredients.
  2. Cook about 5 minutes until done.  (If your oatmeal begins to stick, add a little water.)
  3. Stir in brown sugar to taste.
  4. Pour into a bowl and top with a handful of blueberries.
* To make this dish even better, try it with steel cut oats, but you'll have to cook this a little longer.
