Easy Peasy Italian Pasta Salad {Recipe}

For those of you in the U.S. of A, Happy Fourth of July! 

I intended on wowing you with this fruity tart I was going to make for this day, but I didn't want to pull away from my furniture makeover project to make that tart.  However, I did pull away enough to make this Easy Peasy Italian Pasta Salad because well, I do have to eat and pasta salad for lunch is a whole lot more satisfying than a tart, according to people in the medical field everywhere.

Inspired by this pasta salad recipe, I decided to make my own.  I have modifications yes, partly because I didn't want to leave the house and go to the grocery store and partly because I almost always tend to modify a recipe like this anyways, even when I leave the house and go to the grocery store.   I think it's in my blood.

So below you will find my modified pasta recipe called Easy Peasy Italian Pasta Salad.


{Easy Peasy Italian Pasta Salad}
Ingredients:
miniature farfalle pasta
Hidden Valley Farmhouse Originals Creamy Balsamic with Herbs Dressing
zucchini, cut in half moon shapes
yellow squash, cut in half moon shapes
shredded carrots
fresh spinach
grape tomatoes, halved
shredded Romano cheese

Directions:
  1. Cook pasta according to directions.  When done, drain and rinse with cold water.
  2. Meanwhile in another pot, steam the zucchini, yellow squash, and carrots together.  Before they are almost done, add a bunch of spinach.  When the spinach has wilted, drain and rinse veggies in cold water.
  3. In a mixing bowl, combine pasta, steamed veggies and grape tomatoes.
  4. Add your creamy salad dressing - just enough to give a creamy consistency to the noodles.
  5. Stir in a copious amount of shredded cheese.  Why?  Because I like the word copious.  heehee
This pasta is ready to serve at this point, but I feel like any good pasta salad such as this one, tastes even better after chilled.

You can really use any veggie choice you want and any creamy salad dressing.  I chose the balsamic one because although I had never tried that dressing before, I thought it would taste good.   I was not disappointed.


Okay, because I don't measure pasta very well, I have a lot of pasta salad to spare.  Heading over to my mom's now to share...

  2. That looks great. We were just discussing pasta salad at our house. I haven't made one in years, and turns out our son now tells me he really likes pasta salad. Guess I'd better try one, too.

  4. OMG I am the same way! I know I should drink more water... but the thing is water doesn't have sugar and I usually like my beverages to have sugar. ha!
    But yes, especially with high temperatures and summer weather... I am with you dressing up water will have to do because I need to stay hydrated.
    The waters look so yummy with all that fruit and lemon in them!
