So what did I do? A little of this and a little of that. (Heehee. Don't you just love my vague answers - plus the this and that go more into the upcoming surprise reveal). But what I will tell you is that I made these amazing Oatmeal Peanut Butter Snack Squares.
Now remember I told you that I refused to leave the house, right? Well, this recipe called for whole wheat pastry flour. Well I didn't have that (of course) and so I found this recipe substitution online:
If you don't have pastry flour, do this:
1 1/3 c of All-Purpose Flour + 2/3 c of Cake Flour = 2 c of Pastry Flour
I'm not a huge fan of peanut butter, but I do believe in having a little on hand (just in case) and so I was able to use up the rest of my PB for this recipe. Also, although the creator of this recipe says use milk, she actually used almond milk. I used whole milk which is a surprise because I very rarely have cow's milk in my house. Trying to use up that too before it goes bad. Then, back to my almond milk. I so need to go grocery shopping...
