"I Feel Like Chicken Tonight, Like Chicken Tonight!"


and mushrooms. and spinach.

The last time I went to the Fresh Market, I purchased some baby bella mushrooms. I'd never had them before or their mommas - portobellas, so I thought I'd give it a try.

I searched high and low to find a recipe using them. Finding only two tasty sounding and looking recipes in the one day that I searched, I finally settled on this one: Sauteed Chicken and Baby Bella Mushrooms Served Over Garlic Spinach.

You know I'm the queen of modifications. I'm not sure how many posts I've written where I mentioned modifying the recipe. At any rate, I made only a couple of modifications: I didn't use white wine (which I'm sure would have only enhanced the flavor of this dish) and I sliced my onions instead of chopping them. I will also mention that I did use Garlic and Herb Seasoning, but not the brand the recipe mentions. I used the Old Bay Seasoning kind.
