Most days I enjoy cooking. I even enjoy searching for recipes online, trying to find the perfect one that matches most of the ingredients in my kitchen or my mood for that day. But I have to admit, cooking for one has been difficult for me.
When I learned to cook (okay real basic stuff here) everything was prepared for a minimum of 4 servings, but most times 6. My mom made sure of that. Then when I moved out I realized that a lot of the things I enjoyed from my time with my folks weren't things that I'd been able to easily scale down. I've been torn between cooking those particular dishes and not wanting to waste food and not wanting to eat the same thing over and over again until it's gone.
This may be part of the reason why I enjoy using the Allrecipes site. There, no matter how many servings the dish was intended for, you can reenter the serving size that is appropriate for you and the calculator will recalculate all of the measurements. That's a great feature.
Just a few moments ago, I stumbled across someone's blog that is dedicated to cooking for one: Well Enough Alone. I haven't had a chance to really browse this blog, but the concept is nice. On the right column, I noticed recipes entitled "Just Enough.." Just Enough Banana Bread Muffins. Just Enough Apple Crisp. Just Enough Spaghetti. You get the idea.
I'm going to keep working on cooking smaller portions, but if you have any suggestions, feel free to comment. Otherwise, I might end up with a freezer full of leftovers!
